Terrine of leek and home-smoked mackerel from Eyemouth served with potato salad, horseradish and beetroot
Squid

Ravioli of North Sea squid cooked a l’americaine and served with a courgette and basil sauce
Girolle & Ox
Sauteed Perthshire girolles served with a poached egg, crispy ox tongue and a red wine sauce

Seared wild salmon from Usan served with a ragout of cocoa beans, bacon and shellfish

Roasted duck from Loomswood Farm served with braised red onion cooked with Schezuan pepper, lemon and dried apricot
